Lod Chong, Singaporean Style
Ingredients for Lod Chong
· Tapioca starch 500g
· Boiling water 250ml
· Food coloring 5g

Ingredient for sweetened coconut cream
· Coconut milk 500ml
· Syrup 500ml
· Salt 3g
· Fruits for decoration

Methods
1. Put tapioca starch in a container, add boiling water and food coloring.  Knead to form a dough.
2. Divide the dough above into portions.
3. Use a rolling pin to flatten each portion, then use a knife to cut into strips, about 2-3 mm.
4. Boil water in a pot and gradually add the dough strips.  Boil until cooked (the strips will float up).
5. Scoop out into ice cold water.  Then, transfer the Lod Chong strips into a bowl of water, sweetened with syrup, to prevent from sticking together.
6. Pour coconut milk into a pot.  Season with salt.  Heat on low.  Stir to combine.  Once heat through, remove from stove.
7. Put Lod Chong strips in a tall glass.
8. Add just enough syrup, follow by coconut milk.  Decorate with fruits as desired.
