· Rice flour, Jade Leaf brand 170g
· Potato starch, Jade Leaf brand 37g
· Tapioca starch, Jade Leaf brand 16g
· Skim milk powder 10g
· Baking powder, double actions 1 tsp
· Xanthan gum 1 tsp
· Salt ¼ tsp
· Butter, melted 125g
· Brown sugar 140g
· Granulated sugar 60g
· Egg 1
· Milk 2 tbsp
· Vanilla extract 2 tsp
· Chocolate chips 100g
· Cashew nuts 100g
· Raisins 100g

1. Pre-heat the oven to 180C.  Prepare a baking tray lined with a baking paper.
2. Sieve rice flour, potato starch, tapioca starch, skim milk powder, baking powder, Xanthan gum, and salt together.  Set aside.
3. Mix melted butter, brown sugar and granulated sugar together.  Add egg, milk, and vanilla and stir to combine.  Add the dry ingredients.  Stir, then add chocolate chips, cashew nuts, and raisin.  Mix until combined.
4. Spoon 1 tablespoon of the dough, one at a time, on the baking tray.  Bake in the oven for 18-20 minutes.  Once done, let the cookies cool before storing or serving at room temperature.
